Ingredients

  • 2 lbs chicken breast, cut into steaks
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/4 cup peanut butter
  • 1/4 cup water
  • Salt and pepper to taste
  • 1/4 cup chopped peanuts for garnish

Directions

  1. In a bowl, mix together coconut milk, soy sauce, brown sugar, garlic, ginger, turmeric, cumin, cayenne pepper, salt and pepper.
  2. Add chicken steaks to the marinade, cover and refrigerate for at least 2 hours or overnight.
  3. In a small saucepan, heat peanut butter and water over low heat until smooth and creamy. Set aside.
  4. Preheat grill to medium-high heat. Grill chicken steaks for 4-5 minutes per side, until cooked through.
  5. Serve grilled chicken satay steaks with peanut sauce and garnish with chopped peanuts.
