Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon fresh cilantro, chopped
  • For the Lemon BBQ Dressing:
  • 1/4 cup BBQ sauce
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Directions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with olive oil, salt, and pepper.
  3. Grill the chicken for about 6-8 minutes per side, or until it reaches an internal temperature of 165°F (74°C). Set aside to cool.
  4. Once the chicken has cooled, slice it into thin strips.
