Ingredients

  • 3 pounds beef short ribs
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 cup dark beer
  • 1/2 cup hoisin sauce
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon ginger, grated
  • 2 cups beef broth
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Directions

  1. Preheat the oven to 325°F (165°C).
  2. Season the short ribs generously with salt and black pepper.
  3. Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat.
  4. Add the short ribs and sear them on all sides until browned, about 2-3 minutes per side. Remove the ribs from the pot and set aside.
  5. In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant, about 2-3 minutes.
  6. Add the dark beer, hoisin sauce, soy sauce, brown sugar, rice vinegar, ginger, and beef broth to the pot. Stir well to combine.
  7. Return the short ribs to the pot, ensuring they are fully submerged in the liquid.
  8. Cover the pot and transfer it to the preheated oven. Braise the ribs for 3-4 hours, or until the meat is tender and easily falls off the bone.
  9. Once the ribs are cooked, remove them from the pot and set aside. Skim off any excess fat from the sauce.
  10. In a small bowl, whisk together the cornstarch and water to make a slurry. Slowly pour the slurry into the pot with the sauce, stirring continuously.
  11. Place the pot back on the stovetop over medium heat. Cook the sauce, stirring occasionally, until it thickens to your desired consistency.
  12. Return the short ribs to the thickened sauce, letting them simmer for another 5 minutes to ensure they are heated through.
  13. Serve the braised hoisin beer beef short ribs hot, garnished with sesame seeds and sliced green onions.
  14. Enjoy!
