Directions
Heat the grill to medium-high heat.
In a medium bowl, combine the olive oil, chili powder, garlic powder, cumin, smoked paprika, salt, and black pepper. Add the chicken breasts to the bowl and toss to coat.
Place the chicken on the grill and cook for 4-6 minutes per side, or until cooked through. Remove from the grill and let cool slightly.
Slice the chicken into small cubes.
Lay one tortilla on a work surface. Sprinkle 1/4 cup of cheese over the tortilla. Top with a layer of chicken cubes, then sprinkle with another 1/4 cup of cheese. Top with a second tortilla.
Continue with the remaining tortillas and ingredients, making 4 quesadillas total.
Place the quesadillas on the grill, close the lid, and cook for 3-4 minutes per side, or until the cheese is melted and the tortillas are golden brown.
Serve with sour cream, salsa, and chopped cilantro, if desired.
