Ingredients

  • 4 rockfish fillets
  • 1 cup Italian breadcrumbs
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup butter, melted
  • 1/4 cup diced onion
  • 1/4 cup diced celery
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup dry white wine
  • 1/4 cup fresh parsley, chopped

Directions

  1. Preheat oven to 375 degrees F.
  2. Mix together breadcrumbs, Parmesan cheese, butter, onion, celery, garlic powder, thyme, oregano, pepper, and salt in a bowl.
  3. Place rockfish fillets on a lightly greased baking sheet. Spoon the stuffing onto each fillet, dividing evenly.

  5. Meanwhile, heat cream, wine, and parsley in a saucepan over medium heat until sauce is hot and bubbly.
