Ingredients

  • 4 large artichokes
  • 1/4 cup olive oil

  • For the dipping sauce:
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard

Directions

  1. Trim the artichokes by cutting off the top third and removing the tough outer leaves.
  2. Slice the stems off, leaving about an inch attached to the base. Trim the remaining stem and peel off the tough outer layer.
  3. Place the artichokes in a steamer basket or a large pot with a steamer insert. Add water to the pot, cover, and steam for 25-30 minutes or until the outer leaves can be easily pulled off.
  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  5. Once the artichokes are steamed, remove them from the steamer and let them cool slightly.
  6. Use a spoon to scoop out the hairy choke from the center of each artichoke.
  7. Brush the marinade all over the artichokes, making sure to get in between the leaves.
  8. Preheat the grill to medium-high heat.
  9. Place the artichokes on the grill, cut side down. Grill for 5-7 minutes or until charred and caramelized.
  10. Flip the artichokes and grill for an additional 5-7 minutes.
  11. While the artichokes are grilling, prepare the dipping sauce by combining mayonnaise, Dijon mustard, lemon juice, minced garlic, salt, and pepper in a small bowl. Mix well.
  12. Serve the grilled artichokes hot with the dipping sauce on the side.
