Classic Homemade Whoopie Pies Recipe

Directions

1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
5. Gradually add the dry ingredients to the butter mixture, alternating with buttermilk and hot water. Mix until just combined.
6. Drop spoonfuls of the batter onto the prepared baking sheets, spacing them about 2 inches apart.
7. Bake for 10-12 minutes, or until the tops spring back when lightly touched. Allow the cookies to cool completely on wire racks.
8. To make the filling, beat the softened butter until creamy. Gradually add the powdered sugar, milk, and vanilla extract. Beat until smooth and fluffy.
