Ingredients
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 cup hot water
- Filling:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
Directions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with buttermilk and hot water. Mix until just combined.
- Drop spoonfuls of the batter onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the tops spring back when lightly touched. Allow the cookies to cool completely on wire racks.
- To make the filling, beat the softened butter until creamy. Gradually add the powdered sugar, milk, and vanilla extract. Beat until smooth and fluffy.
- Once the cookies have cooled, spread a generous amount of filling on the flat side of one cookie. Top with another cookie, flat side down, to create a sandwich.
- Repeat the process with the remaining cookies and filling.
- Serve immediately or refrigerate until ready to serve.
