Ingredients

  • 2 whole trout, cleaned and gutted
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, sliced
  • 1 tablespoon fresh parsley, chopped
  • Canning jar with lid

Directions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together the olive oil, minced garlic, paprika, dried oregano, dried thyme, salt, and black pepper.
  3. Rub the mixture all over the cleaned trout, both inside and outside.
  4. Place the lemon slices inside the trout cavity.
  5. Grill the trout for about 4-5 minutes per side or until cooked through and slightly charred.
  6. Remove the trout from the grill and let it cool completely.
  7. Once cooled, carefully remove the skin and bones from the trout and flake the flesh into bite-sized pieces.
  8. Transfer the flaked trout into a canning jar, layering it with fresh parsley in between.
  9. Press the trout down to ensure there are no air pockets and cover it with olive oil, ensuring all the fish is submerged.
  10. Secure the lid tightly on the canning jar.
  11. Place the jar in a pot of simmering water, ensuring the water level reaches 1-inch below the lid.
  12. Let the jar simmer for 20 minutes to seal and preserve the trout.
  13. Remove the jar from the water and let it cool to room temperature.
  14. Refrigerate the canned trout for at least 24 hours before consuming for the flavors to develop.
