Ingredients
- 1 medium jicama, peeled and diced
- 1 green apple, cored and diced
- 1 lb. cooked prawns, peeled and deveined
- 2 tablespoons fresh mint, chopped
- 1 stalk lemongrass, minced
- 1/2 cup plain yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1/4 cup olive oil
- Salt and pepper to taste
Directions
- In a large bowl, combine jicama, apple, prawns, mint and lemongrass.
- In a separate bowl, whisk together yogurt, mustard, honey, olive oil, salt and pepper until fully combined.
- Pour the dressing over the salad ingredients and toss to combine.
- Serve the salad chilled or at room temperature.
