Ingredients

  • 1 medium jicama, peeled and diced
  • 1 green apple, cored and diced
  • 1 lb. cooked prawns, peeled and deveined
  • 2 tablespoons fresh mint, chopped
  • 1 stalk lemongrass, minced
  • 1/2 cup plain yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1/4 cup olive oil
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine jicama, apple, prawns, mint and lemongrass.
  2. In a separate bowl, whisk together yogurt, mustard, honey, olive oil, salt and pepper until fully combined.
  3. Pour the dressing over the salad ingredients and toss to combine.
  4. Serve the salad chilled or at room temperature.
