Ingredients

  • 1 whole leg of lamb
  • 2 oranges, juiced
  • 1 tablespoon olive oil
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 eggplant, sliced

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a small bowl, mix together the orange juice, olive oil, oregano, rosemary, garlic, salt, and pepper to make a marinade.
  3. Rub the marinade all over the lamb leg and place it in a roasting pan.
  4. Arrange the onion, bell pepper, zucchini, and eggplant around the lamb.
  5. Pour the remaining marinade over the vegetables.
  6. Cover the roasting pan with foil and bake in the preheated oven for 1 hour.
  7. Remove the foil and bake for an additional 30 minutes, or until the lamb is cooked through and the vegetables are tender.
  8. Serve the roast lamb with the vegetables.
