Ingredients
- 1 whole leg of lamb
- 2 oranges, juiced
- 1 tablespoon olive oil
- 2 tablespoons fresh oregano, chopped
- 2 tablespoons fresh rosemary, chopped
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 1 red onion, sliced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 eggplant, sliced
Directions
- Preheat the oven to 350 degrees F (175 degrees C).
- In a small bowl, mix together the orange juice, olive oil, oregano, rosemary, garlic, salt, and pepper to make a marinade.
- Rub the marinade all over the lamb leg and place it in a roasting pan.
- Arrange the onion, bell pepper, zucchini, and eggplant around the lamb.
- Pour the remaining marinade over the vegetables.
- Cover the roasting pan with foil and bake in the preheated oven for 1 hour.
- Remove the foil and bake for an additional 30 minutes, or until the lamb is cooked through and the vegetables are tender.
- Serve the roast lamb with the vegetables.
