In a large pot, combine the water, salt, brown sugar, peppercorns, allspice, coriander, ginger, thyme, bay leaves, vinegar, onion, carrot, and celery. Bring the mixture to a boil, stirring to dissolve the salt and sugar.
Reduce the heat and simmer for 5 minutes. Remove from the heat and let the brine cool to room temperature.
Place the turkey in a large container or brining bag, and pour the cooled brine over the turkey. Cover and refrigerate overnight (up to 24 hours).
