Ingredients

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 2 cups lady fingers, sliced
  • 2 cups okra, sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the garlic, onion, and bell pepper and cook, stirring occasionally, until the vegetables are softened, about 3 minutes.
  3. Add the lady fingers, okra, cumin, coriander, turmeric, garam masala, salt, and black pepper and stir to combine.
  4. Continue to cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
  5. Stir in the cilantro and serve warm.
