Ingredients
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 2 cups lady fingers, sliced
- 2 cups okra, sliced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro
Directions
- Heat the oil in a large skillet over medium-high heat.
- Add the garlic, onion, and bell pepper and cook, stirring occasionally, until the vegetables are softened, about 3 minutes.
- Add the lady fingers, okra, cumin, coriander, turmeric, garam masala, salt, and black pepper and stir to combine.
- Continue to cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
- Stir in the cilantro and serve warm.
