Ingredients

  • 1 pound ground beef
  • 1/2 cup dry bread crumbs
  • 1 egg, lightly beaten
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley

  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 (14.5 ounce) cans diced tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. In a large bowl, mix together the ground beef, bread crumbs, egg, 2 cloves garlic, 2 tablespoons parsley, cumin, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Form into 1-inch balls and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and 2 cloves garlic and cook until the onion is softened, about 5 minutes. Stir in the diced tomatoes, parsley, oregano, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Simmer for 15 minutes, stirring occasionally.
  3. Add the meatballs to the sauce and simmer for an additional 20 minutes, stirring occasionally. Serve with crusty bread or a fresh salad.
