Ingredients
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 potatoes, diced
2 stalks celery, diced
1 zucchini, diced
2 tablespoons vegetable oil
6 cups vegetable broth
Salt and pepper to taste
Directions
In a large pot, heat the vegetable oil over medium heat.
Add the onion and garlic and sauté until the onion is soft, about 5 minutes.
Add the carrots, potatoes, celery and zucchini and sauté for about 5 minutes.
Pour in the vegetable broth and bring to a boil.
Reduce the heat to low and simmer for 20 minutes or until the vegetables are tender.
Taste and adjust seasoning with salt and pepper.
Serve warm.
