Grandma's Chinese Vegetable Soup

Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 2 stalks celery, diced
  • 1 zucchini, diced
  • 2 tablespoons vegetable oil
  • 6 cups vegetable broth
  • Salt and pepper to taste

Directions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion and garlic and sauté until the onion is soft, about 5 minutes.
  3. Add the carrots, potatoes, celery and zucchini and sauté for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat to low and simmer for 20 minutes or until the vegetables are tender.
  6. Taste and adjust seasoning with salt and pepper.
  7. Serve warm.
