Ingredients

  • 1 cup heavy cream
  • 1/2 cup sugar
  • 4 egg yolks
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons brandy (optional)
  • 1/2 cup chopped dark chocolate
  • 1/2 cup chopped toasted almonds

Directions

  1. In a medium bowl, whisk together the heavy cream, sugar, egg yolks and cocoa powder until smooth.
  2. Add the vanilla extract and brandy (if using) and mix until fully combined.
  3. Fold in the chopped dark chocolate and toasted almonds.
  4. Pour the mixture into a 9x5 inch loaf pan lined with parchment paper.
  5. Cover the pan with plastic wrap and freeze for 8 hours or overnight.
  6. To serve, let the semifreddo sit at room temperature for 10 minutes before slicing and serving.
