Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium avocados, mashed
  • 1/2 cup white wine
  • 4 cups chicken broth
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 pound cooked shrimp, peeled and deveined
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup heavy cream

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and sauté until softened, about 5 minutes.
  3. Add the mashed avocados, white wine, chicken broth, smoked paprika, cayenne pepper, salt, and black pepper. Stir to combine.
  4. Bring the soup to a boil, then reduce the heat to low and simmer for 15 minutes.
  5. Add the cooked shrimp and parsley, and simmer for 5 more minutes.
  6. Stir in the heavy cream and simmer for an additional 2 minutes.
  7. Serve the soup warm.
