Ingredients

  • 1 pound of fresh salmon fillet
  • 2 tablespoons of olive oil
  • 1 teaspoon of sea salt
  • 1 teaspoon of freshly ground black pepper
  • 1 lemon, thinly sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons of fresh herbs (thyme, oregano, basil), chopped
  • 1 cup of fresh vegetables (carrots, potatoes, asparagus), chopped
  • 1 tablespoon of butter

Directions

  1. Preheat the oven to 350°F/175°C.
  2. Cut four large pieces of parchment paper.
  3. Place the salmon fillet in the center of each parchment paper.
  4. Drizzle the salmon with olive oil and sprinkle with sea salt and pepper.
  5. Top the salmon with the lemon slices, garlic, herbs, and vegetables.
  6. Fold the parchment paper around the salmon and vegetables.
  7. Place the packets on a baking sheet and bake for 20 minutes.
  8. Unwrap the parchment paper and serve the salmon with the vegetables and a pat of butter.
