Ingredients

  • 1 pound beef, cubed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 3 heads bok choy, chopped

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef, onion and garlic and cook until the beef is browned.
  3. Add the beef broth, soy sauce, cornstarch, ginger, salt and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  4. Add the bok choy and cook for an additional 10 minutes, until the bok choy is tender.
  5. Serve hot.
