3 1/2 cups (400 g) all-purpose flour, plus extra for dusting
2 teaspoons (10 g) fine sea salt
1/4 teaspoon instant yeast
1 1/2 cups (350 ml) cold water
Olive oil, for greasing
Directions
In a large bowl, whisk together the flour, salt, and yeast. Add the cold water and stir with a wooden spoon until a shaggy dough forms.
Cover the bowl with a damp cloth and let the dough rest at room temperature for 12-18 hours.
After the resting period, the dough should be bubbly and doubled in size. Grease a 9x5 inch loaf pan with olive oil.
Turn the dough out onto a lightly floured surface and shape into a loaf. Place the dough in the prepared pan, cover with a damp cloth, and let rise for 1-2 hours.
Preheat the oven to 450°F (230°C). Once the oven is preheated, bake the bread for 25-30 minutes, until golden brown and crusty.
Let cool before slicing.
