Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 small butternut squash, peeled and diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can white beans, drained and rinsed
  • 1 cup green beans, trimmed and cut into 1-inch pieces

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, celery, and butternut squash and cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
  2. Stir in the garlic, oregano, basil, red pepper flakes, salt, and pepper and cook for 1 minute.
  3. Add the broth, diced tomatoes, white beans, and green beans and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the vegetables are tender, about 20 minutes.
