- 1/2 cup butter, softened
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar

- 1 cup gluten-free old-fashioned rolled oats

Directions
- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
- In a medium bowl, cream together the butter and sugars until light and fluffy.
- Add in the egg and vanilla extract and mix until combined.
- In a separate bowl, whisk together the oats, flour, cinnamon, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Fold in the raisins and nuts, if using.
- Drop the dough by the tablespoonful onto the prepared baking sheet.
- Bake for 10-12 minutes, until the edges are golden brown.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
