Ingredients

  • 2 carrots, grated
  • 1 zucchini, grated
  • 1/4 cup gluten-free all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 1/3 cup water
  • 2 tablespoons olive oil, plus more for frying

Directions

  1. In a large bowl, combine grated carrots, zucchini, gluten-free flour, cornstarch, baking powder, salt, garlic powder, cumin, pepper and water. Stir until all the ingredients are well-combined.
  2. Heat a large skillet over medium-high heat. Add 2 tablespoons of olive oil and swirl to coat the bottom of the skillet.
  3. Using a spoon, scoop the mixture into the skillet and flatten them into fritters. Cook for 3-4 minutes on each side, or until golden brown and crispy. You may need to adjust the heat to medium-low if the fritters are cooking too quickly.
  4. Transfer the cooked fritters to a plate lined with paper towels. Serve warm or at room temperature.
