Ingredients

  • 3 tablespoons butter
  • 1/2 cup diced onion
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 2 cups chicken broth
  • 1/2 cup milk
  • 2 cups diced cooked chicken
  • 1 1/2 cups frozen mixed vegetables
  • 1 (9-inch) unbaked pie crust
  • 1 (9-inch) top pie crust

Directions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Melt the butter in a large skillet over medium heat, and cook the onion for 5 minutes, or until tender.
  3. Stir in the flour, thyme, and pepper until blended. Gradually stir in the chicken broth and milk. Simmer until thickened, stirring occasionally.
  4. Stir in the chicken and vegetables.
  5. Spoon the mixture into the unbaked pie crust.
  6. Place the top crust over the filling, and seal and flute the edges. Cut a few slits in the top crust to allow steam to escape.
  7. Bake in the preheated oven for 30 to 35 minutes, or until the crust is golden brown.
