Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cups diced tomatoes
  • 1 cup diced pineapple
  • 1 cup diced mango
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cooked black beans
  • 1/2 cup cooked kidney beans

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and bell peppers, and cook for 5 minutes, stirring occasionally.
  2. Add the diced tomatoes, pineapple, mango, cumin, chili powder, smoked paprika, salt, and black pepper. Stir to combine.
  3. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
  4. Add the black beans and kidney beans, and continue to simmer for another 10 minutes.
  5. Serve hot with your favorite toppings.
