Ingredients
1 package chocolate cookie crumbs (about 2 1/4 cups)
1/4 cup melted butter
1 quart of vanilla ice cream, slightly softened
1/2 cup chopped nuts (optional)
1/2 cup caramel sauce
1/2 cup semi-sweet chocolate chips
Directions
Preheat oven to 350°F (175°C).
In a medium bowl, mix together the cookie crumbs and melted butter until combined.
Press the crumb mixture firmly into the bottom of an 8x8-inch baking dish.
Bake in preheated oven for 10 minutes.
Allow to cool completely before continuing.
Spread the softened ice cream over the cooled cookie crust in an even layer.
Sprinkle the chopped nuts over the ice cream, if desired.
Drizzle the caramel sauce over the top of the nuts.
Melt the chocolate chips in the microwave for 30 seconds, stirring every 10 seconds until melted and smooth.
Spread the melted chocolate over the caramel sauce in an even layer.
Cover with plastic wrap and freeze for at least 4 hours, or overnight.
To serve, cut into bars.
