1 lb. boneless chicken breasts, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch cubes
1 green bell pepper, cut into 1-inch cubes
1 onion, cut into 1-inch cubes
1/4 cup olive oil
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
Salt and pepper, to taste
10-12 wooden skewers, soaked in water for 30 minutes
Directions
In a large bowl, combine chicken, bell peppers, onion, olive oil, garlic powder, cumin, chili powder, paprika, cayenne pepper, salt, and pepper. Toss to evenly combine.
Thread chicken and vegetables onto the wooden skewers. Place skewers on baking sheet.
Preheat grill to medium-high heat.
Grill skewers for about 10 minutes, flipping halfway through, until chicken is cooked through and vegetables are tender.
Serve with salsa and guacamole.
