Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons grated ginger
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • Salt to taste

Directions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
  3. Stir in the ginger, garam masala, cumin, turmeric, coriander, and cayenne pepper and cook for 1 minute.
  4. Add the tomatoes, chickpeas, and vegetable broth and bring to a simmer.
  5. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
  6. Season with salt to taste and serve hot.
