Ingredients

  • 2 lbs chicken breast, cut into strips
  • 1 cup shredded coconut
  • 2 cups all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1/2 cup passion fruit juice
  • 1/4 cup honey
  • 1/4 cup freshly squeezed lime juice
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper and set aside.
  2. In a shallow dish, combine the coconut, flour, eggs, and breadcrumbs. Season with salt and pepper.
  3. Dip the chicken strips in the egg mixture, then coat with the coconut mixture.
  4. Place the chicken strips on the baking sheet and drizzle with the olive oil. Bake for 20-25 minutes or until golden and crispy.
  5. Meanwhile, in a small saucepan over medium heat, combine the passion fruit juice, honey, and lime juice. Simmer for 10 minutes or until the sauce thickens.
  6. Remove chicken from the oven and serve with the passion fruit sauce.
