Ingredients

  • 1 8-10 lb. turkey
  • 1/2 cup olive oil
  • 2 tablespoons garlic powder
  • 2 tablespoons smoked paprika
  • 1 tablespoon chili powder
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 1 teaspoon cayenne pepper
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Directions

  1. Preheat oven to 350°F.
  2. In a small bowl, mix together all of the spices. Set aside.
  3. Rinse the turkey inside and out and pat dry.
  4. Rub the turkey with the olive oil.
  5. Rub the spice mixture all over the turkey, inside and out.
  6. Place the turkey in a roasting pan and cover with aluminum foil.
  7. Roast for 2 to 2 1/2 hours, or until the internal temperature reaches 165°F.
  8. Remove the foil and continue roasting for an additional 15 minutes, or until the skin is golden brown and crispy.
  9. Let the turkey rest for at least 20 minutes before carving.
