Ingredients
- 2 ears of corn, husked
- 1/4 cup mayonnaise
- 1/2 cup grated cheese (such as Cotija or Parmesan)
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Directions
- Preheat oven to 350 degrees F.
- Place the corn on a baking sheet and roast for 15 minutes, turning once during cooking.
- In a small bowl, mix together the mayonnaise, cheese, chili powder, garlic powder, cumin, paprika, and salt and pepper to taste.
- Once the corn is done cooking, let it cool for a few minutes and then spread the mayonnaise mixture onto the corn.
- Sprinkle with additional cheese and chopped cilantro, if desired.
- Serve in a cup and enjoy!
