Ingredients

  • 2 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/2 cup grated cheese (such as Cotija or Parmesan)
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Directions

  1. Preheat oven to 350 degrees F.
  2. Place the corn on a baking sheet and roast for 15 minutes, turning once during cooking.
  3. In a small bowl, mix together the mayonnaise, cheese, chili powder, garlic powder, cumin, paprika, and salt and pepper to taste.
  4. Once the corn is done cooking, let it cool for a few minutes and then spread the mayonnaise mixture onto the corn.
  5. Sprinkle with additional cheese and chopped cilantro, if desired.
  6. Serve in a cup and enjoy!
