Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 pint of cherry tomatoes, halved
  • 1 15oz can of garbanzo beans, drained and rinsed
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat oven to 400°F.
  2. In a large bowl, combine cauliflower, tomatoes, and garbanzo beans. Drizzle with olive oil and sprinkle with garlic powder, oregano, thyme, salt, and pepper. Toss to combine.
  3. Spread the vegetables and beans onto a large baking sheet. Roast in the preheated oven for 25-30 minutes, stirring once halfway through, until vegetables are tender and lightly browned.
  4. Serve hot.
