Ingredients
- 4 large potatoes, peeled and cubed
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons chopped fresh dill

Directions
- Place the potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat.
- Reduce heat to medium-low and simmer the potatoes for 15-20 minutes, or until they are tender.
- Drain the potatoes and let cool for a few minutes.
- In a small bowl, mix together the mayonnaise, mustard, dill, pepper, and salt.
- In a large bowl, combine the cooled potatoes and the mayonnaise mixture.
- Stir gently to combine, taking care not to mash the potatoes.
- Chill for at least 30 minutes before serving.
