  • 2 cups couscous

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

  • ¼ teaspoon black pepper
  • 4 cups vegetable broth
  • Juice of 1 lemon
  • ½ cup chopped fresh cilantro

  • ⅓ cup sliced almonds, toasted

Directions

  1. In a large bowl, place the couscous and drizzle with 1 tablespoon of olive oil. Mix well to coat the couscous with oil.
  2. In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
