In a large skillet over medium-high heat, cook the ground beef and onion until the beef is browned and the onion is tender, about 8 minutes. Drain any excess fat.
Add the curry powder, cumin, garam masala, chili powder, coriander, salt and pepper and stir to combine. Cook for 1 minute.
Remove from the heat and set aside to cool.
Lay out the spring roll wrappers on a clean surface and brush lightly with the beaten egg.
Place a spoonful of the beef mixture in the center of each wrapper and fold the edges up and around the filling to form a triangle. Press to seal.
Heat the oil in a large skillet over medium-high heat. Fry the samosas in batches until golden brown, about 4 minutes per side.
Drain on paper towels and serve.
