Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 potatoes, diced
  • 2 cups chicken broth
  • 1/2 cup frozen peas
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Directions

  1. Heat the oil in a large pot over medium heat. Add chicken and cook until lightly browned, about 5 minutes.
  2. Add garlic, oregano, paprika, cumin, salt, and pepper and cook for 1 minute.
  3. Add onion, carrots, celery, and potatoes and cook for 5 minutes, stirring occasionally.
  4. Add chicken broth and bring to a boil. Reduce heat to low and simmer for 15 minutes.
  5. Add frozen peas and cook for 5 minutes.
  6. In a small bowl, mix together the cornstarch and cold water until smooth. Slowly add to the stew, stirring constantly, and cook until thickened, about 5 minutes.
