1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 onion, diced
2 carrots, diced
2 stalks celery, diced
2 potatoes, diced
2 cups chicken broth
1/2 cup frozen peas
2 tablespoons cornstarch
2 tablespoons cold water
Directions
Heat the oil in a large pot over medium heat. Add chicken and cook until lightly browned, about 5 minutes.
Add garlic, oregano, paprika, cumin, salt, and pepper and cook for 1 minute.
Add onion, carrots, celery, and potatoes and cook for 5 minutes, stirring occasionally.
Add chicken broth and bring to a boil. Reduce heat to low and simmer for 15 minutes.
Add frozen peas and cook for 5 minutes.
In a small bowl, mix together the cornstarch and cold water until smooth. Slowly add to the stew, stirring constantly, and cook until thickened, about 5 minutes.
