Ingredients
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1/2 teaspoon turmeric
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garam masala
- 1 cup red lentils, rinsed and drained
- 2 cups vegetable broth
- 1 cup diced tomatoes
- Salt and pepper, to taste
- 1/4 cup chopped cilantro
Directions
- Heat oil in a medium pot over medium heat. Add cumin seeds and cook until fragrant, about 1 minute.
- Add garlic and ginger and cook until fragrant, about 30 seconds.
- Add turmeric, coriander, cayenne pepper, and garam masala. Stir to combine.
- Add lentils and stir to coat in spices. Add broth and tomatoes and bring to a boil.
- Reduce heat to low and simmer, uncovered, until lentils are tender, about 10 minutes.
- Season with salt and pepper, to taste.
- Stir in cilantro and serve.
