Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground sausage
  • 1 small yellow onion, diced
  • 2 tablespoons minced garlic
  • 2 large potatoes, diced
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 cup chopped parsley

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sausage and cook until browned. Remove from the skillet and set aside.
  3. Add the onion and garlic to the skillet and cook until softened and fragrant.
  4. Add the potatoes and season with the paprika, garlic powder, onion powder, salt, and pepper.
  5. Stir to combine and cook for 10 minutes, stirring occasionally.
  6. Add the cooked sausage back to the skillet and stir to combine.
  7. Continue cooking for 10-15 minutes, or until the potatoes are cooked through.
  8. Stir in the parsley and season with additional salt and pepper, if desired.
  9. Serve immediately.
