Ingredients

  • 1 package 15-bean soup mix
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 2 cups vegetable broth
  • 2 cups water
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 1 (15-ounce) can black beans, drained and rinsed
  • 3 cups chopped kale
  • 1/4 cup chopped fresh parsley

Directions

  1. Sort through the 15-bean soup mix and discard any stones or debris. Rinse the beans and set aside.
  2. Heat the olive oil in a large soup pot over medium heat. Add the onion and sauté for 5 minutes, until softened.
  3. Add the garlic, oregano, thyme, basil, paprika, and pepper. Cook for 2 minutes, stirring often.
  4. Add the vegetable broth, water, tomatoes, tomato sauce, and beans. Bring to a boil, reduce heat, and simmer for 60 minutes, stirring occasionally.
  5. Add the kale and parsley and cook for an additional 15 minutes, stirring occasionally.
  6. Remove from heat and serve hot.
