Ingredients

  • 1 cup corn kernels, fresh or frozen
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1 large egg, beaten
  • 1/4 cup milk
  • 2 tablespoons butter, melted
  • Vegetable oil for frying

Directions

  1. In a medium bowl, combine the corn, flour, baking powder, sugar, salt, and pepper.
  2. Stir in the onion and bell pepper.
  3. In a separate bowl, whisk together the egg, milk, and melted butter.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.

  8. Remove from the oil and place on a paper towel-lined plate to drain.
