Ingredients
- 2 tablespoons of olive oil

- 1 green bell pepper, diced
- 1 pound of ground beef
- 1 can of diced tomatoes, drained

- 1 can of black beans, drained and rinsed
- 1 teaspoon of chili powder
- 1/2 teaspoon of cumin
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of shredded Cheddar cheese
- 1/2 cup of crushed tortilla chips
Directions
- Preheat oven to 350°F.
- Heat olive oil in a large skillet over medium-high heat.
- Add the onion, garlic, and bell peppers and cook until softened.
- Add the ground beef and cook until browned, about 5 minutes.
- Stir in the diced tomatoes, corn, black beans, chili powder, cumin, salt, and black pepper.
- Transfer the mixture to an oven-safe casserole dish.
- Sprinkle the shredded cheese and crushed tortilla chips over the top.
- Bake for 20 minutes, or until cheese is melted and the casserole is heated through.
