Ingredients

  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 pound of ground beef
  • 1 can of diced tomatoes, drained
  • 1 can of corn, drained
  • 1 can of black beans, drained and rinsed
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 cup of shredded Cheddar cheese
  • 1/2 cup of crushed tortilla chips

Directions

  1. Preheat oven to 350°F.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the onion, garlic, and bell peppers and cook until softened.
  4. Add the ground beef and cook until browned, about 5 minutes.
  5. Stir in the diced tomatoes, corn, black beans, chili powder, cumin, salt, and black pepper.
  6. Transfer the mixture to an oven-safe casserole dish.
  7. Sprinkle the shredded cheese and crushed tortilla chips over the top.
  8. Bake for 20 minutes, or until cheese is melted and the casserole is heated through.
  9. Serve hot.
