- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 ounces button mushrooms, sliced
- 2 garlic cloves, minced
- 1 cup marsala wine
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley, for garnish
Directions
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness using a meat mallet or rolling pin. Season both sides with salt and black pepper.
- Dredge the chicken breasts in flour, shaking off any excess.
- In a large skillet, heat the olive oil and butter over medium-high heat.
- Add the chicken breasts to the skillet and cook until golden brown on both sides, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
