Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces button mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 cup marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley, for garnish

Directions

  1. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness using a meat mallet or rolling pin. Season both sides with salt and black pepper.
  2. Dredge the chicken breasts in flour, shaking off any excess.
  3. In a large skillet, heat the olive oil and butter over medium-high heat.
  4. Add the chicken breasts to the skillet and cook until golden brown on both sides, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the sliced mushrooms and minced garlic. Cook until the mushrooms have released their moisture and are golden brown, about 5-6 minutes.
