Ingredients

  • 2 cups diced tomatoes
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/4 cup extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 baguette, sliced into 1/2 inch slices

Directions

  1. In a medium bowl, combine the tomatoes, basil, parsley, garlic, olive oil, salt, and pepper.
  2. Preheat the oven to 350 degrees F (175 degrees C).
  3. Arrange the baguette slices on a baking sheet and toast in the preheated oven for 8 to 10 minutes, or until golden brown.
  4. Remove from the oven and top with the tomato mixture.
  5. Serve immediately.
