Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon sesame oil
  • 1/2 cup diced carrots
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1/2 cup frozen peas
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame seeds

Directions

  1. In a medium saucepan, bring quinoa and vegetable broth to a boil. Reduce heat to low and simmer for 15 minutes.
  2. Heat sesame oil in a large skillet over medium-high heat. Add carrots, bell pepper, onion, peas, garlic, and ginger. Cook, stirring occasionally, for 5 minutes.
  3. Add cooked quinoa to the skillet and stir to combine. Cook for 5 minutes.
  4. Add soy sauce, rice vinegar, and sesame seeds. Stir to combine and cook for 5 minutes.
  5. Serve hot.
