Ingredients

  • 8 ounces penne pasta
  • 12 ounces flank steak
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Directions

  1. Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. Preheat a grill or grill pan over medium-high heat. Season the flank steak with salt, black pepper, and dried oregano. Grill the steak for about 4-6 minutes per side for medium-rare or until desired doneness. Remove from the grill and let it rest for 5 minutes. Slice the steak against the grain into thin strips.
  3. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, Kalamata olives, red onion, feta cheese, and chopped parsley.
  4. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper. Pour the dressing over the pasta salad and toss well to coat all the ingredients.
  5. Add the sliced grilled steak to the salad and gently toss to combine. Adjust the seasoning if needed.
  6. Refrigerate the Greek pasta salad for at least 30 minutes to allow the flavors to meld together. Serve chilled and enjoy!
