Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper, to taste
  • 8 ounces fettuccine pasta
  • Fresh parsley, for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, add the minced garlic and diced onion. Cook until softened and fragrant, about 2-3 minutes.
  3. Add the chicken broth, heavy cream, grated Parmesan cheese, dried Italian seasoning, salt, and pepper to the pot. Stir well to combine.
  4. Break the fettuccine pasta in half and add it to the pot. Stir to submerge the pasta in the liquid.
  5. Bring the mixture to a boil, then reduce heat to low. Cover the pot and simmer for 15-20 minutes, or until the pasta is cooked to al dente and the sauce has thickened.
  6. Return the cooked chicken to the pot and stir to combine with the pasta and sauce. Cook for an additional 2-3 minutes to heat the chicken through.
  7. Remove the pot from heat and let it rest for a few minutes before serving.
  8. Serve the One-Pot Chicken Alfredo hot, garnished with fresh parsley.
