Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 1 clove garlic, minced
- 1 can (15 ounces) refried beans
- 1 can (10 ounces) diced tomatoes with green chilies, drained
- 1 package (8 ounces) cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro, for garnish
- Tortilla chips, for serving
Directions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet with the cooked beef. Cook for an additional 2-3 minutes until the onion is translucent.
- Add the refried beans, diced tomatoes with green chilies, cream cheese, cheddar cheese, Monterey Jack cheese, chili powder, cumin, paprika, salt, and black pepper to the skillet. Stir until well combined and the cheeses are melted.
- Reduce the heat to low and let the dip simmer for 5-10 minutes, until it thickens slightly.
- Remove the skillet from the heat and garnish the dip with chopped fresh cilantro.
