  • 1 tablespoon vegetable oil
  • 1 pound smoked sausage, sliced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup frozen okra
  • 2 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 bay leaf
  • Salt and black pepper, to taste
  • Cooked rice, for serving
  • Chopped green onions, for garnish

Directions

  1. Heat vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add the smoked sausage slices and cook until browned, about 5 minutes. Remove the sausage from the pot and set aside.
  3. In the same pot, add the chicken breast pieces and cook until browned, about 5 minutes. Remove the chicken from the pot and set aside.
  4. Add the diced onion, bell pepper, celery, and minced garlic to the pot. Cook until the vegetables are softened, about 5 minutes.
  5. Return the sausage and chicken to the pot.
  6. Add the diced tomatoes, frozen okra, chicken broth, Cajun seasoning, dried thyme, dried oregano, paprika, cayenne pepper, bay leaf, salt, and black pepper. Stir to combine.
  7. Bring the gumbo to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, stirring occasionally.
  8. Remove the bay leaf and discard.
  9. Serve the gumbo hot over cooked rice.
  10. Garnish with chopped green onions.
