Ingredients

  • 1 pound ground beef
  • 1 onion, chopped

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) tomato sauce
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups cooked rice

Directions

  1. Preheat oven to 375°F.
  2. In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and onions are tender.
  3. Stir in diced tomatoes, corn, black beans, tomato sauce, chili powder, cumin, salt, and pepper. Cook for 5 minutes.
  4. Spread cooked rice in the bottom of a 9x13-inch baking dish. Top with the beef mixture.
  5. Sprinkle shredded cheddar cheese on top.
  6. Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
