Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) tomato sauce
- 1 cup shredded cheddar cheese
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 cups cooked rice
Directions
- Preheat oven to 375°F.
- In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and onions are tender.
- Stir in diced tomatoes, corn, black beans, tomato sauce, chili powder, cumin, salt, and pepper. Cook for 5 minutes.
- Spread cooked rice in the bottom of a 9x13-inch baking dish. Top with the beef mixture.
- Sprinkle shredded cheddar cheese on top.
