Ingredients

  • 1/2 cup cooked eel
  • 1/4 cup cooked crab meat
  • 1/4 cup avocado, diced
  • 1/4 cup cucumber, diced
  • 4 sheets nori seaweed
  • 1 cup cooked sushi rice
  • 1/4 cup unagi sauce
  • 1 tablespoon sesame oil

Directions

  1. In a bowl, mix together the eel, crab, avocado and cucumber. Set aside.
  2. Lay a sheet of nori seaweed on a sushi mat. Spread 1/4 cup of sushi rice over the nori, leaving a 1-inch border on the side.
  3. Spread 1/4 of the eel and crab mixture over the rice.
  4. Using the sushi mat, roll the nori and rice into a log shape. Squeeze lightly to make sure the roll is tight.
  5. Cut the roll into 8 pieces and arrange on a plate.
  6. Repeat steps 2-4 with the remaining nori, rice and eel and crab mixture.
  7. Drizzle the unagi sauce and sesame oil over the rolls and serve.
