Ingredients
1/2 cup cooked eel
1/4 cup cooked crab meat
1/4 cup avocado, diced
1/4 cup cucumber, diced
4 sheets nori seaweed
1 cup cooked sushi rice
1/4 cup unagi sauce
1 tablespoon sesame oil
Directions
In a bowl, mix together the eel, crab, avocado and cucumber. Set aside.
Lay a sheet of nori seaweed on a sushi mat. Spread 1/4 cup of sushi rice over the nori, leaving a 1-inch border on the side.
Spread 1/4 of the eel and crab mixture over the rice.
Using the sushi mat, roll the nori and rice into a log shape. Squeeze lightly to make sure the roll is tight.
Cut the roll into 8 pieces and arrange on a plate.
Repeat steps 2-4 with the remaining nori, rice and eel and crab mixture.
Drizzle the unagi sauce and sesame oil over the rolls and serve.
