Ingredients

  • 3 ears of corn
  • 2 jalapenos
  • 1/4 cup olive oil
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • Salt and pepper to taste

Directions

  1. Preheat the grill to medium-high heat.
  2. Grill the corn for 5-7 minutes, turning often, until it is lightly charred.
  3. When the corn is cool enough to handle, cut the kernels off the cob and set aside.
  4. Place the jalapenos on the grill and cook for 5 minutes, turning often, until they are lightly charred and softened.
  5. Remove the jalapenos from the grill and place them in a food processor or blender.
  6. Add the olive oil, lime juice, salt and pepper, and blend until smooth.
  7. In a large bowl, combine the grilled corn, red onion, bell pepper, and cilantro. Pour the jalapeno dressing over the top and stir to combine.
  8. Serve the salad warm or cold.
